you use a program called mcedit most often
download here:  http://www.mcschematics.com/index.php?topic=11377.0
                         http://www.mcschematics.com/index.php?topic=8033.0

you can also use them with
schematic2blueprint which tells you how to build them
http://www.mcschematics.com/index.php?topic=2405.0
and
world edit which is for servers (i have never used it)
